Shawarma, an appetising levantine meal is very popular in Nigeria as it is the toast of the young and the old. Writes kehinde Oladapo.
Shawarma, also Shaurma and other spellings, is a middle eastern meat preparation based on the donor kebab of Ottoman Turkey. Originally made of lamb or mutton. Today’s Shawarma may also be chicken, turkey , beef, or veal, cut in thin slices and stacked in a cone-like shape on a vertical rotisserie.

INGREDIENTS
-Chicken breasts
-Chicken thighs/ laps,
-Salt
-Maggi
-Curry powder
-Dried thyme
-Onion powder
-Garlic salt
-Crushed chillies “ grounded shombo”
-Lemon juice
-Water
-Flat bread
-Tomatoes
-Red onions
-Cabbage
-Lettuce
-Julienne carrots
-Tatase
-Dry pepper
-Mayonnaise
-Ketchup
-Salad cream
-Hotdog
MARINADE
1 Teaspoon thyme
onion powder
1 large chicken seasoning cue
½ teaspoon black pepper
Salt
Chili pepper to taste
1 teaspoon vegetable
-Olive oil
-Lemon juice
-Foil paper
PREPARATION OF SHAWARMA
Cut the chicken into thin strips, place in a bowl, mix in the marinade properly with the chicken. Cover and leave to marinate for a while [ 2 hours to a day] depending on the amount of time you have.
•Season the chicken breasts to your taste and leave it in the fridge for about 30 – 45 minutes.
•Add 2 tablespoon of oil to a frying pan or griddle pan if you choose to grill it and allow it to get very hot. Take the chicken breasts out of the fridge and place in the pan.
•Allow it to sear for 2 minutes. 1 minute in, take a sharp knife and make incisions on the chicken breast to allow the heat to penetrate deep into the flesh. Give it another 2 – 3 minutes and allow the chicken to cook thoroughly.
•Take the chicken breast out of the hot pan and slice longitudinally on a chopping board for convenience, set aside and leave it to rest.
-slice and chop all the vegetables.
•Get the flat bread and place on foil paper.
•Mix ketchup and mayonnaise together, spread on the bread.
•Lay over the vegetables over the bread, spread the chicken on top and add hotdog.
•Place the sliced chicken breasts on top, scoop on Mayo and ketchup and sprinkle on a little dry pepper.
•Once rolled, wrap with the foil paper.
•Place the wrap in the oven and let it grill for 5 minutes.
• You can also place the wrap in a dry frying pan.
•You can substitute the chicken for beef to make a beef shawarma , or mix both chicken and beef depending on your taste.
•Enjoy your meal with a chilled drink.
