Owo soup is more like a palm oil sauce, eaten largely by the Edo people in the South South region of Nigeria. The soup is mostly eaten with yam or plantain. Some eat it with starch and other solid food. It is a fast food to make and it’s suitable to meet up with busy schedules, or break fast this Ramadan period.
Ingredients
Assorted meat
Crayfish or seafood
Palm Oil
Potash
Tomatoes
Chilli pepper – ata rodo
Seasoning
Preparation
Boil and season your meat in a pot
Add the crayfish and your seafood
Separate the meat and dice into small portions
Blend pepper and tomatoes slightly so it’s not too smooth
Boil without adding water
Add little potash to the mixture
Allow it to thicken for a few minutes (if the thickness is not suiting, add very little dry garri)
Then add seasoning, salt, minced meat, crayfish, prawns and any other seafood of your choice.
Boil again for 2-3 minutes
Turn off the heat and allow content to cool down
Add palm oil or groundnut oil when it’s cool
In a few seconds, the palm oil will change from red to yellow
Put back on fire so it warms up a little and then serve with yam, plantain or starch.
