Rice is one staple food that is common to all Nigerians nay Africans. Different tribes and countries have different ways of cooking this food. The most popular ways of cooking rice in Nigeria that are common to all ethnic groups are boiling are frying. These two methods are usually used to cook jollof rice, fried rice, coconut rice, rice and stew and ofada rice.
Another type of rice which is common among the elite is rice pudding. Rice pudding is a thick creamy milk recipe made with rice, milk, sugar, butter, vanilla and so on. This meal can either be baked or cooked. One of the health benefits of rice pudding is that it is very rich and nutritious.
It is a food that is good for both young and old and can be eaten at any time of the day be it in the morning, afternoon or at night. Ingredients
1 levelled tin milk of Rice.
½ tin milk of castor sugar
½ litre milk
½ teaspoon Butter or Margarine
2-3 drops Vanilla essence
Grated nutmeg to taste.
Procedure for baked rice
Step 1: Wash the rice, place it in a pie dish.
Step 2: Add the sugar and milk and mix well.
Step 3: Add the butter, vanilla essence and nutmeg.
Step 4: Place on a baking sheet, clean the rim of the pie dish.
Step 5: Bake in moderately hot oven until the milk starts simmering.
Step 6:Â Reduce the heat and allow the pudding to cook slowly.
Step 7: Remove it from the oven after two hours and serve it hot.

Procedure for boiled rice pudding
Step 1: Boil the milk in a thick based pan.
Step 2: Add the washed rice, stir to boil.
Step 3: Simmer gently, stirring frequently until the rice is cooked.
Step 4: Mix in the sugar, flavours and butter (you can add an egg yolk if you so desire).
Step 5: Pour into a pipe dish, place on a baking tray and brown lightly under the salamander.
Step 6: By now, your pudding is ready to be served.
