Egg sauce, combined with yam is one of the breakfast staples in Nigeria, but over the years, eggplants, popularly known as garden egg, when made as sauce, has also been discovered as a staple that can also give delicious taste like that of egg sauce.
For those who dislike eggplant due to its somewhat bitter taste, you can add more tomatoes to quench this natural (bitter) taste.
Here’s what you need to make your garden egg sauce:
INGREDIENTS
Garden eggs
Blended pepper
Seasoning cube
Vegetable oil
Salt
Beef sausage
Onion
METHOD
Remove the head part of the garden egg and wash properly. Boil for 10 to 20 minutes on medium heat. Once it is tender, drain the water and chop roughly. Put aside.
Put a pan on medium heat and add vegetable oil. Add sliced onion into the pan allow to fry for five minutes. After frying, pour blended pepper inside and allow it cook. When you are sure it has been cooked to some extent, pour the chopped garden egg inside. Add seasoning cube, salt, beef sausage, then cover it and reduce the heat. Allow it to steam for few minutes. When it is ready, serve with boiled yam or boiled plantain.
