Walk around any street at night in Nigeria and you will most likely see a suya stand at different junctions. This popular street food in Nigeria is even more popular among the peoples of the northern part of Nigeria. It is flavourful, smokey and delicious and it is mainly marinating strips of meat threaded in skewers with spices and grilling the meat.
Any meat can be used to make suya such as chicken, beef, ram or even offals, but the most popular one found at road sides is the beef suya. One might be wondering how it is made, not to worry, Saturday Tribune is here for you.
To get started, make sure you have an oven, an oven rack, skewers and a sharp knife.
INGREDIENTS
Meat – It could be beef, ram, chicken or any other type of meat you like.
Suya Spice (Popularly called Yaji. It contains peanuts, ginger and other spices)
Cling film (A transparent plastic food wrap)
Cooking brush (To apply oil on the meat)
Vegetable oil
Seasoning cubes
Salt
METHOD
Firstly, you cut your meat across the grain into thin strips. After cutting, add seasoning cube, suya spice and salt to the strips. Make sure you are generous with the seasoning. Mix properly and cover with cling film, then leave in the fridge to marinate for at least 30 minutes.
After 30 minutes, bring out the marinated meat and thread on pre-soaked skewers (which you have already soaked in cold water for two to six hours to prevent or minimise burning in the oven). Apply more yaji all over the meat then brush with vegetable oil.
Arrange the skewered beef on an oven rack then grill in the oven at a temperature of 175C (fan) for 15 minutes.
After 15 minutes, turn the beef to the other side and grill for another 10 minutes.
Bring out of the oven, remove the suya from skewers, sprinkle with more suya spice, and serve with sliced onions, tomatoes, cucumber and cabbage.
