Ingredients
3 large or 4 medium-sized over ripe plantains
2 to 3 cups of flour
Salt
A teaspoon of baking powder
2 eggs
1 or 2 large bell peppers
Handful of chopped spring onions
A liter of oil frying
A cup of cooked shrimps or cooked minced meat (optional)
Procedures
- Blend the bell peppers, eggs and plantains together.
- In a separate bowl, add the flour (start with 2 cups), baking powder and salt.
- Add the blended ingredients to the bowl of dry ingredients add the spring onions and mix well.
- If the mixture is too watery add a little flour at a time. The mixture should fall off slowly from a wooden spoon.
- Heat the oil in a deep frying pan.
- You can add the cooked shrimps or minced meat if you are using them.
- Make sure the oil is hot before frying.
- Put mixture in the oil one spoon at a time. Do not add too much because your fritters would rise and float.
- Fry on each side till uniformly golden brown.
