Gizzard is a small muscular organ found in the digestive tract of some birds and fish, and it is a good source of B12, zinc, iron, and others.
They are mouth-watering when properly cooked and can be boiled, fried, skewered or even peppered. Just make sure you cook till they are tender as they are naturally tough.
Spicy food lovers would totally enjoy the peppered gizzard, while, for those who don’t like pepper, can reduce the pepper quantity.

INGREDIENTS
Gizzards
Habanero pepper
Vegetable oil
Onion
Salt
Bouillon cubes
Curry
Thyme
METHOD
Properly wash the gizzards and place them in a pot to boil. Add water, salt, and little quantity of curry and thyme. Cover it and let it cook for 20 minutes. While the gizzard boils, blend the habanero pepper but make sure it is coarsely blend. You can decide to blend the onion with it or chop it, then set aside.
When the gizzards are cooked, pour it in a sieve so it can drain. The next step is frying, but if you don’t want your gizzards fried, you can skip this step.
In a pan, add little quantity of oil, then pour in the chopped onion. Thereafter, add the blended pepper, bouillon cube, thyme, curry and salt and let it fry for about five minutes. Add the fried gizzard and stir till it is properly mixed. Turn down the heat and let it cook for about 10 minutes. Your peppered gizzard is ready!
Serve hot with any cold drink of your choice.
