Try Egbo with beans

EgboEGBO is a delicacy that is made by cooking dry corn grains until they are very soft and burst open. The beans are cooked until they are very soft too. Both the beans and corn are served together with pepper sauce or vegetable oil. But these days, the maize grains are taken to the mill and grounded so as to reduce the size.

Maize can be enjoyed in various ways such as being roasted,  cooked, grounded or pounded to prepare various food items like kenke, (donkunu)

People from some states in the South West relish Egbo with a type of vegetable, called “ororo robo.”  The combination of maize grains and beans are both high in dietary fiber and contain lots of nutrients like vitamins and minerals. Beans are rich in proteins while corn grains are rich in carbohydrates. This weekend, I still wan you to give your family a hero’s welcome this weekend by preparing Egbo and beans with sauce or  vegetable oil or palm-oil .

Ingredients:

Maize
Beans
Onion (diced)
Peppers and tomatoes (ground)
Grounded dry cayenne
Grounded shrimps (optional) Smoked fish (optional)
Seasoning cubes
Palm oil
Salt

Preparation of Egbo

Steps involved:
Wash corn and beans. Boil them separately until soft and pulpy. Add salt to taste.

Preparation of Egbo sauce:
Egbo and ewa sauce is made using scotch or bonnet pepper, red bell pepper, onions, palm oil and seasoning.

Heat up the oil in a sauce pan, add the diced onion and pepper mixture. Stir well with a spoon till it’s fully mixed. Allow to cook over for about five minutes on low heat.

Add the shrimps and the washed flaked fish to the sauce, stir well and cook for 10 minutes.
Serve the boiled corn and beans with the prepared sauce. But if you can get ororo robo, you will become an Oliver Twist as you will keep asking for more and more.
