INGREDIENTS
Short-grain or broken white rice
5-6 cups of water
Salt (optional)
The key ingredient to making great Tuwo Shinkafa lies in the cooking process.
Use short-grain or broken rice, as it softens easily and sticks together when mashed.
Avoid high heat, which can make it get burnt easily.
PREPARATION
• Rinse rice thoroughly to remove excess starch.
• Place rice in a pot, add water, and cook on medium heat until it becomes soft and mushy.
• Use wooden spatula or turning stick to mash and stir rice continuously until it forms a thick, stretchy dough.
Once smooth, scoop Tuwo Shinkafa into small balls using wet hands or a spoon.
