Cabbage egusi soup for your weekend delight

CABBAGE is one of the world ’s healthiest foods. Many people think cabbage can be best used only in preparing the vegetable salad. But, there is more to cabbage’s usefulness.

Cabbage offers fibre and vitamins, with absolutely no fat or cholesterol. Some people even use boiled cabbage to reduce weight.

One of the best ways of enjoying cabbage is when cooked with egusi soup.

Egusi soup is a special soup cooked and enjoyed by Nigerians and other Africans. Here is another way to make a special egusi soup.

Let us get started on how to cook cabbage egusi soup.

 

 Ingredients

Cabbage

Bitter leaf or any green vegetable leaf like spinach

Meat

Ginger stem

Garlic

Onions

Seasoning cubes

Salt

Tomatoes

Vegetable oil

 

Preparation

Put diced meat in a pot and add little vegetable oil, 2 cups of water, marinate with salt, pepper, ginger and garlic. Cover the pot and allow its contents to boil for 45 minutes. Check every 10 minutes to add more water if dry.

Soak the cabbage in hot water for 5 minutes. Remove and drain water from the cabbage. In another pot, fry diced onions until they are translucent. Add diced tomatoes and fry the contents thoroughly. Add ground egusi and meat into fried tomato sauce. Stir them thoroughly to ensure all the ingredients mix properly.

Add the well-drained cabbage and green vegetable into the soup and stir. Cook the contents for an additional 10 minutes.

Now, your cabbage egusi soup is ready. It is best served with fufu.
