Garden Egg is a good source of dietary fibre, minerals and vitamins such as vitamin B1, potassium, magnesium, Vitamin B6, niacin and other various secrete nutrients that help the human body take care of itself. Researchers have said they are good in various functions which are highlighted below:

Garden eggs help in weight reduction because they contain low carbohydrates and calories essential for weight management.

They aid digestive processes because of the fibre possessed by garden eggs (common in fruit or vegetable)

Garden egg leaves serve as blood tonic for people suffering from anaemia (blood shortage)

The leaves serve as detoxifiers to the kidney and is effective when eaten raw or converted into juice by boiling

 

So, let’s make garden egg leaf soup

 

Ingredients

Garden egg leaves

Uziza leaves and seeds

Beef

Stock fish

Dry fish

Dry pepper

Cubes seasoning

Blended crayfish

Palm oil

Diced boiled potatoes

 

Preparation

Wash beef and stock fish, put in a pot and bring to boil

Add crayfish, seasoning cubes and dry pepper

When beef is tender, add palm oil and you can use diced boiled potatoes to thicken

Add your fresh, dried or smoked fish

Add your uziza leaves and blended seed

Add your garden egg leaves, salt to taste, stir and allow cooking for 3-5 minutes.

Turn off the heat

Serve with any food choice; rice, solid foods or yam.
