Plantain fritters to blow your mind, please your stomach

Looking for what to do with overripe plantains then this is one recipe for you. This is also a fun food for children and can be eaten as either a snack, main meal or side dish.

Ingredients

3 large or 4 medium-sized over ripe plantains

2 to 3 cups of flour

Salt

A teaspoon of baking powder

2 eggs

1 or 2 large bell peppers

Handful of chopped spring onions

A liter of oil frying

A cup of cooked shrimps or cooked minced meat (optional)

 

Procedures

  1. Blend the bell peppers, eggs and plantains together.
  2. In a separate bowl, add the flour (start with 2 cups), baking powder and salt.
  3. Add the blended ingredients to the bowl of dry ingredients add the spring onions and mix well.
  4. If the mixture is too watery add a little flour at a time. The mixture should fall off slowly from a wooden spoon.
  5. Heat the oil in a deep frying pan.
  6. You can add the cooked shrimps or minced meat if you are using them.
  7. Make sure the oil is hot before frying.
  8. Put mixture in the oil one spoon at a time. Do not add too much because your fritters would rise and float.
  9. Fry on each side till uniformly golden brown.
