Let’s make peanut burger!

Peanut burger, also known as coated groundnut, is a snack made by coating groundnut with flour, milk, eggs and other ingredients. It is a good source of protein, healthy fat and carbohydrates.

It is a sweet healthy snack that can be preserved for up to six months and more if well stored.

Peanut burger snack is common in mini shops and supermarkets. However, the homemade coated peanuts taste better than the ones from the stores.

 

INGREDIENTS

3 cups of dried groundnut

3 cups of flour

1/3 cup of powdered milk

4 eggs

1/3 cup of sugar

1/2 teaspoon of cinnamon

1cap of liquid vanilla flavour

Pinch of salt

 

METHOD

Pour your groundnut into a bowl, add hot water, add enough salt to taste and leave for 20 minutes. Drain the water from the groundnut and transfer to a large tray. Let it sun dry.

In another bowl, add sifted flour, then add powdered milk and cinnamon.

Break eggs and add just the egg white into another bowl. Whisk the egg and add sugar. Allow the sugar to melt.

Transfer the sun-dried groundnut into a bowl, add egg mixture enough to coat groundnut then add flour mixture to groundnut mixed with egg, and then flip the bowl in a clockwise position.

Repeat the coating process after sieving the excess flour particles till the groundnut is well coated with flour.

Set a pot on heat and add vegetable oil. Allow to heat up. Put coated peanut into the oil on heat. Stir continuously to avoid burning. It’s ready when its golden brown.

Transfer to a sieve to drain excess oil, leave to cool completely, before serving.
