My wife and I both have the AS genotype. Our doctor explained to us that we have one in four chance of having children with Sickle Cell Disease. Even though my wife and I are very worried at this likelihood, we still desire to have children. Kindly advise.

Since you have the desire to have children, you have no choice but to go ahead with having them. At the end of the day, you may be lucky to get away with not having any Sickle Cell children.
