Chef Bam’s favourite recipe is his iconic ―‘Dochiegg sandwich’

The concept behind the ‘ Dochiegg Sandwich’ is that bread and eggs should never be boring, there are awesome and yummy ways to spice it up and one of them is this recipe that Chef Bams whipped up by himself!

Ingredients and condiment

1) Two Eggs

2) Smoked chicken

3) Red ball pepper

4) Scotch bonnet pepper

5) Onion

6) Garlic powder

7) Ginger powder

8) Salt

9) Seasoning cubes

10) Olive Oil or Vegetable oil

11) Plantain (1)

12) Spring onion

13) Sliced bread

 

Procedure

1) Get your smoked chicken shredded in a plate (it’s advisable to use the chicken breast, it has less bone)

2) Blend your scotch bonnet pepper, onions and red ball pepper altogether.

3) Slice your spring onions and your onion ball separately on a chopping board.

4) Break the two eggs into a bowl.

Method of preparation

– Turn on your burner and place a non stick cooking pot , allow to dry then add some olive or vegetable oil into the pot; allow to boil for a few minutes then toss your diced plantains into it. Allow to fry till it turns golden brown.

– Place another non stick cooking pot on the burner and pour two cooking spoons of oil into the pot and allow to boil a little.

Add the sliced onion, fry for minutes and add the grinded pepper into it cooking pan, add two pinches of garlic and ginger in to the sauce and two cubes of seasoning cubes

– Add salt to taste.

– Toss the smoked shredded chicken into the sauce and stir fry

– Beat those two eggs and toss into the sauce and sprinkle the sliced spring onions into the batter and stir a bit and allow to fry for minutes (until it gives a pizza shape)

-Lay out two slices of bread, spread some Mayonnaise cream then add some fried dochiegg sandwich between two slices of bread .

– Nicely cut off the brown tough edge of the bread and dissect into two from the edge.

-Repeat this process until you are done with the dochiegg.

This can be taken with juice, coffee, beverage, chocolate or smoothie.
