Burabisco is a traditional couscous meal which is common among the Northern people of Nigeria. It is made with couscous (crushed wheat formed into small grains) and garnished with chicken or beef and vegetable oil. However, it can also be cooked without chicken or meat.
Ingredients
Shredded beef
Green and Red pepper
Cameroon pepper
Black pepper
Carrot
Vegetable oil
Seasoning
Salt
Scallion (Spring onion)
Sliced onion
Garlic
Powdered ginger
Curry and Thyme
Method
Wash the beef properly, then spice it in a bowl with Cameroon pepper, black pepper, Curry and thyme, vegetable oil, salt and powdered ginger. Turn it together properly.
Pour vegetable oil into a pan and allow it to heat up on a medium level.
Add the beef into the pan, and let it fry. The beef will release some juice into the oil. Remove the beef after 10 minutes and put aside or into refrigerator for 30 minutes or more.
Slice garlic and onion into the pan and turn it for 5 minutes. Then add carrot diced in cubes, salt, red and green pepper. When the beef is cool, pour it into the pan and turn it. Reduce the heat and let the couscous brabisco steam.
Pour little hot water into a bowl then add little salt and little vegetable oil. Sprinkle couscous into the hot water solution and cover it for 6-8 minutes for the couscous to dry up the water. The small volume of hot water is so that the couscous would not become watery.
Once the couscous dries up the water, use spoon to spread the couscous and spread it into the pan with burabisco mixture. Let it cook together for about five minutes. Your burabisco is ready!
