Let’s talk about the season, corn is everywhere. You have roasted or boiled them but probably not made a salad out of it?
Here you go…
Ingredients
Fresh or frozen corn
Chopped red pepper
Chopped green pepper
Chopped green onions
Lemon juice
1/2 teaspoon salt
1/2 teaspoon dried thyme
Mayonnaise
1 teaspoon sugar
Preparation
In a large bowl, combine all the first three ingredients except the corn.
Heat oil or butter of about 1 tablespoon in a frying pan
Pour the ingredients and allow to sizzle for three minutes while stirring
Turn off the heat and allow mixture to cool
In another jar with a tight lid, mix 1 tablespoon of lemon juice, salt to taste, thyme and shake well
Stir the corn into both mixtures after in a bowl with sugar to taste
Cover and refrigerate for at least 2 hours before serving.
You may garnish with chopped barley and mayonnaise
Serve with beef or your choice food.

Kitchen scale: Is important for precision in baking; measuring ingredients by weight is the most accurate method.
