OGBONO soup is one of the soups in Nigeria that cut across ethnic lines. Among the Yoruba it is called apon. It is made from a local seed called Ogbono seed (ooro in Yoruba). Most people love to eat ogbono with solid foods like eba, fufu, Akpu and so on.
Ingredients for Ogbono soup
-meat of choice [Beef, Chicken, Turkey or Assorted meat]
-1 cup of Ogbonoseeds
-stock fish head
-2 medium size dry fish
-1 cup of crayfish
-fluted pumpkin
-1 teaspoon of Ogiri or ground Bawa pepper
-10cl to 15cl of palm oil
-1 litres of water.
– Maggi
– Salt and
pepper to
taste.
How to make Ogbonosoup
-Soak the dry fish and stock fish with hot water and wash thoroughly to remove sand and impurities.
-Parboil the meat the normal way, with all the necessary ingredients [Maggi, salt]
-Add water to the meat after about 10 minutes; cook till it is soft enough for consumption
-Add the washed dry fish and stock fish for about 10 to 150ml of palm oil, grounded crayfish, stir, cover and cook for 5-10 minutes.
– Add salt and pepper to taste, add a cube of maggi, add the grounded Ogbono seeds, stir and cook for 5 minutes.
-Add the vegetables; allow simmering for 3 minutes after adding the chopped fluted pumpkin leaves or bitter leaves.
-Allow to cook for 2 minutes.
-Serve, eat and enjoy your meal with Semovita, Eba, pounded yam Amala and Fufu.
