The Kitchen Monster’s ata rice

Ingredients:

15 pieces of red bell pepper (tatashe)

15 pieces of scotch bonnet pepper (rodo)

3 big onions.

1 1/2 cup of palm oil

1/2 cup of crayfish (optional)

1/2 cup of prawns (optional)

1/4 kg of cowhide (ponmo)

1/4 kg of offal

2 pieces of smoked fish

1/2 kg of beef

3 bullion cubes

Salt

Procedure:

  1. Rinse the pepper and blend roughly with two onions.
  2. Rinse the offal into a pot and parboil it for eight minutes.
  3. While the offal is boiling, rinse the beef and cowhide.
  4. Drain hot water from offal and rinse it with cold water before adding it to the beef and cowhide.
  5. Season the meats with two bullion cubes, half onion and salt. Cook.
  6. Put the blended pepper on fire and boil till the water dries out.
  7. Rinse the crayfish, prawns and smoked fish with warm water.
  8. Place a pot or pan on heat source and pour palm oil into it. Shred the remaining half onion into it. Keep stirring till the onion turns golden brown.
  9. Remove the onions from the oil and pour the boiled pepper into it. Add the stock from the beef and let it cook for five minutes.
  10. Taste to see if there is need for more seasoning. Add, if need be.
  11. Add the beef, crayfish, prawns, smoked fish, offal and cowhide. Cover it for five minutes.
  12. Reduce the heat and leave on fire till oil maps the surface of the sauce.
  13. Remove pot from fire. Your sauce is ready.
  14. Serve with rice, beans, pasta or any other food of your choice.

Her passion for cooking reflects on the excellent delivery of her craft-food. Apart from cooking, Kemi is a woman of many skills and she brings all her skills together for one purpose-impacting lives. She writes to reach out to others and takes up talking engagements across the country. She is a lover of people, an advocate for freedom and an ambassador for excellent workmanship. The young  entrepreneur is now a graduate of Law from Obafemi Awolowo University.
