Pancakes with a zing!

I grew up having this for breakfast. My mother loved to experiment in the kitchen and this was her usual go-to breakfast for me and my sisters. It is really easy to make. Most people would think this recipe is madness but with an open mind, your taste palate will thank you!

 

Ingredients

Vegetable Oil

1 ½ cup of all purpose flour

Sugar

½ of nutmeg

3 teaspoons of baking soda

4 tablespoons of powdered milk

Pinch of salt

2 eggs

2 scotch bonnet pepper (Ata rodo)

½ bulb of onions

½ inches of fresh ginger

Peanut butter

Preparation

Sieve the flour together with the baking soda to remove lumps. Grate the nutmeg into the flour mixture and set aside. Mix the milk with warm water and sugar, the set aside. Whisk your eggs and set aside.

Blend the pepper, onions and ginger together. Now its time to mix them all up!

Make a hole in the centre of the flour then pour in the milk into it, along with the blended pepper and whisk until smooth. Pour in the whisked eggs and mix gently for consistency. If too thick, add warm water until it reaches a batter texture. Finally, add a pinch of salt.

A non stick pan is the right utensil for pancakes. Put the pan on low heat, add Two table spoons of oil  then gently scoop your batter into the pan and fry till it is light brown. For the final magic, serve the pancakes with a glob of peanut butter on the side.
