Moin-moin elemi meje: The delicacy with seven souls

I have not come across any Nigerian who does not enjoy moin- moin (beans pudding). There are several methods of cooking moin-moin but the most popular and mouth watering of them all is the method that is called moin-moin elemi meje (moin-moin with seven souls)– a way of classifying moin-moin with seven ingredients.

This special moin-moin, unlike the regular moin-moin is quite expensive to prepare, looking from the series of assorted ingredients used in preparing it. This kind of moin-moin is not served at parties but cooked at home, when one wants to give their family a delicacy treat.

The process of making moin-moin could be a little tedious and time consuming, that of moin-moin elemi meje is even more time consuming. Moin moin elemi meje can be enjoyed with Ijebu garri, bread, eko, pap\custard or jollof rice.

This weekend, give your family a treat by preparing this soul lifting moin-moin elemi plenty!

 

What you need:

Beans (preferably : sweetened beans)

 

The seven ‘souls’:

  • Minced meat
  • Titus fish
  • Lobster
  • Green pepper
  • Carrot
  • Butter
  • Egg

Additional ingredients:

  • Red pepper
  • Seasoning cubes
  • Salt
  • Vegetable oil
  • Onion
  • Nutmeg

 

Directions

  • Wash, season and cook the fish and set aside.
  • Season the minced meat with meat ingredients of your choice, cook set aside.
  • Boil eggs and set aside.
  • Chop green pepper, carrots and onion into cubes.
  • Grate the nutmeg and also wash the lobsters and set aside.
  • Soak beans in water for 45 minutes; peal the beans skin by rubbing them together to reveal the white parts.
  • Blend the beans with red pepper and onions
  • Transfer the well blended beans into a bowl and add some water and stir.
  • Add the cooked fish, minced meat, freshly cut onions, nutmeg, chopped green pepper, butter, salt, boiled egg and stir with a wooden spoon.
  • Scoop the mix into a soufflé plastic cups, wide leaves or transparent nylon.
  • Cook for one hour, until the beans pudding hardens.
  • Serve hot with Ijebu garri, bread, eko, pap\custard or rice.
