ChocBoy’s favourite chocolate dessert: Blueberry chocolate muffin

This has to be one of the easiest chocolate desserts everyone can make for themselves. Of course, you can have any toppings you will like to have but my favourite is with blueberries.

1 ¾ cups of all-purpose flour

1 cup of sugar

½ cup of unsweetened cocoa powder

¼ teaspoon baking soda.

2 teaspoons baking powder

2 large eggs (liquid)

1 cup milk

½ teaspoon vanilla extract

½ cup melted butter.

½ cup mini chocolate chips

½ cup dried blueberries (can be substituted with any other dried fruits)

 

Directions

Preheat the oven to 180 degrees Celsius

Grease 12 cup cupcake tin or you can use cupcake liners.

Combine flour, sugar, cocoa, baking powder, baking soda in a large bowl and mix together.

Add eggs, milk, vanilla extract, chocolate chips and melted butter.

Stir until well mixed.

Add blueberries and stir.

Spoon into the cup cake baking trays or muffin pans preferably.

Bake for 18-20mins.

I am Oluwajare Fola-Bolumole, a graduate of Mechanical Engineering from the University of Ibadan, Nigeria. I am an engineer turned chocolatier and chocolate maker. I turned an irresistible passion to a business, the passion for chocolate. The benefits of chocolates are numerous and it is most beneficial in its dark form (dark chocolate).  Some of the numerous benefits of chocolates are,

  1. Chocolate has a lot of antioxidants (one of the best on the earth) that improves blood flow and lower blood pressure which makes it good for the heart.
  2. Dark chocolate in particular can reduce insulin resistance which is another common risk factor for many diseases like heart diseases and diabetes(our dark chocolate in particular is made up of 80 per cent cocoa solids).
  3. Dark chocolate can protect your skin against the sun. The bioactive compounds in dark chocolate is great for the skin. Studies have shown that the flavanols from cocoa can improve blood flow to the skin and protect it against sun-induced damages.
  4. Chocolate can improve brain function because of the improved blood flow function the properties of chocolate gives. Cocoa can improve cognitive function in elderly people with mental impairments.

The improved blood flow function of chocolate especially dark chocolate makes for the benefits of better blood flow in the human body.

The fatty acid profile of cocoa and dark chocolate is excellent because most of it is saturated and monosaturated with small amounts of polyunsaturated fats.

Of course, like every other thing, proper rationing and proportion must be applied to have a balanced diet. So, if you have a 100g chocolate bar, you need not consume it at once. It can be divided into three and a-third consumed daily.
