It is not every day you enjoy a soup that has carrot as its main ingredient. The carrot is thus in a class of its own, not only in terms of ingredient but also by virtue of the nutrients it offers. High in protein, fibre and low in calorie, it can be very filling and delicious.
The soup can be eaten on its own or paired with bread. It seems to go down well with Semovita too.
Ingredients
1 tablespoon of extra virgin olive oil
1 medium onion
1 stalk of celery
1 teaspoon of thyme
2 cloves of garlic
5 cups of chopped carrot
2 cups of water
Freshly ground pepper
Half teaspoon of salt
4 cups of chicken stock
Preparation
Heat the olive oil in a medium sized pot for about 10 seconds before adding the chopped onions and celery. Allow it cook for four to six minutes while stirring occasionally.
Add thyme and garlic and stir continuously for a minute.
Stir in the carrot and ground pepper. Add water and the chicken stock. Turn the heat to a high and allow the content of the pot simmer.
Reduce heat after 5 minutes and allow to cook on medium heat for 25 minutes until the carrots are tender.
Allow the pot cool off and transfer the content into a blender, puree the soup and return to pot.
Allow it cook for 30 minutes.
Serve and enjoy.
